Problem with SMTP mail. Where can I find more detailed logs?

I'm trying to trouble-shoot email problems with two Nova sites I'm running.
I'm trying to a TLS encrypted authenticated server smtp.ziggo.nl, but it's not having it.

I don't get any errors, but the mails don't seem to come through. They used to come through fine for one of the sites. However, we have noticed that that one has also stopped sending mails.

How can I get some more detailed logging from the mailing system, and where can I find it?

Neither the logging in /var/log/apache2, nor the logging in /var/www/[...]/application/logs aren't that helpful...

It would appear that all suddenly started working again.

However, I still wouldn't mind some more expressive logging. Could I submit this as an RFC?
